3/4 cup | 177ml | Extra virgin olive oil |
2 tablespoons | 30ml | Red wine vinegar |
1 1/2 teaspoons | 7.5ml | Salt |
1 1/2 teaspoons | 7.5ml | Freshly-ground black pepper |
2 cups | 320g / 11oz | Canned garbanzo beans - drained |
5 | Pickling cucumbers or Kirbies - peeled and diced | |
1 | Red onion - diced (medium) | |
2 | Tomatoes - peel, seed, dice | |
1 | Fresh basil - chopped |
Combine olive oil, vinegar, salt, and pepper in a large bowl and whisk. Add remaining ingredients, toss and chill.
This recipe yields 6 to 8 servings.
