Thai Chicken Skewers Recipe - Cooking Index
1/4 cup | 49g / 1.7oz | Smooth peanut butter |
2 tablespoons | 30ml | Finely-chopped onion |
2 tablespoons | 30ml | Fresh lemon juice |
1 1/2 teaspoons | 7.5ml | Soy sauce |
1 | Garlic clove - finely chopped | |
1/2 teaspoon | 2.5ml | Dried coriander |
1 teaspoon | 5ml | Tabasco brand Pepper Sauce |
2 tablespoons | 30ml | Finely-chopped parsley |
1 lb | 454g / 16oz | Boneless skinless chicken breasts - cut 1" pieces |

In a medium bowl, combine first 8 ingredients. Add chicken pieces and toss to coat. Cover and refrigerate 6 to 8 hours or overnight. After marinating, thread chicken on wooden skewers.
Grill or broil 6 to 8 minutes, turning frequently. Do not overcook. Serve warm on skewers.
This recipe yields 30 to 35 pieces.
