Spiced-Up Butternut Squash Recipe - Cooking Index
1 cup | 198g / 7oz | Butternut squash, about 2 pounds (large) |
1/4 cup | 49g / 1.7oz | Butter or margarine |
1/2 cup | 118ml | Water |
2 cups | 474ml | Pears - cored, and (large) |
Cut into 1" chunks | ||
2 tablespoons | 30ml | Minced fresh ginger |
2 teaspoons | 10ml | Tabasco brand Pepper Sauce |
1 teaspoon | 5ml | Salt |
Remove skin and seeds from butternut squash; cut squash into 1-inch chunks. Melt butter in 12-inch skillet over medium heat. Add butternut squash chunks; cook 10 minutes, stirring occasionally. Add water, pears, ginger, Tabasco sauce and salt; over high heat, heat to boiling. Reduce heat to low; cover and simmer 5 minutes or until squash is tender.
This recipe yields 6 servings.
