Zesty Bruschetta Recipe - Cooking Index
1 | French bread baguette - cut 1" slices | |
1 cup | 62g / 2.2oz | Diced plum tomatoes - drained of |
Excess juice | ||
2 | Green onions - (to 3) - chopped | |
1 | Feta cheese - (4 oz) - crumbled | |
1/4 cup | 36g / 1.3oz | Chopped black olives |
1/8 cup | 18g / 0.6oz | Finely-chopped fresh basil |
1 teaspoon | 5ml | Olive oil |
1/2 teaspoon | 2.5ml | Tabasco pepper sauce |
Salt - to taste |
Preheat broiler. Place bread slices on broiling pan and broil each side until lightly toasted. Set aside.
In medium bowl, gently combine remaining ingredients with fork until well blended. Using fork, top each toasted bread slice with generous mound of tomato mixture.
Serve on platter, garnished with large sprig of basil, if desired.
This recipe yields 20 to 24 pieces.
