1/3 cup | 65g / 2.3oz | Fat-free egg substitute |
1/2 teaspoon | 2.5ml | Vanilla extract |
1 3/4 cups | 109g / 3.8oz | All-purpose flour |
1/3 cup | 65g / 2.3oz | Granulated sugar |
2 teaspoons | 10ml | Double-acting baking powder |
1/4 cup | 40g / 1.4oz | Light brown sugar - (firmly packed) |
Preheat the oven to 350 degrees. Spray a 9-inch square baking pan with nonstick cooking spray.
In a medium bowl, with a wooden spoon, stir together the applesauce, pineapple juice, milk, egg substitute and vanilla.
In a large bowl, combine the flour, granulated sugar and baking powder; make a well in the center. Add the applesauce mixture; stir until just combined (do not overmix).
Scrape the batter into the pan. Spoon the crushed pineapple over the batter and sprinkle with the brown sugar. Bake until golden and a toothpick inserted in the center comes out clean, about 30 minutes. Cool in the pan on a rack 10 minutes; serve warm.
