Cracked Wheat Salad Recipe - Cooking Index
1/2 cup | 118ml | Cracked wheat |
1 1/2 cups | 355ml | Water |
2 cups | 292g / 10oz | Chopped parsley |
1/2 cup | 73g / 2.6oz | Chopped mint |
1/2 cup | 118ml | Thinly-sliced scallion, white, green parts |
2 cups | 125g / 4.4oz | Diced peeled tomato |
1/4 cup | 59ml | Olive oil |
1/4 cup | 59ml | Lemon juice |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Tabasco pepper sauce |
Soak wheat in water about 30 minutes, until tender. In large bowl, toss together parsley, mint, scallion and tomato. Drain wheat well and add to ingredients in bowl.
Beat together oil, lemon juice, salt and Tabasco pepper sauce; pour over wheat and vegetables and mix well. Serve in large lettuce cups.
This recipe yields 6 servings.
