Old-Fashioned Oatmeal Raisin Cookies

3   Eggs - beaten
1 cup 160g / 5.6ozGolden or dark raisins
1 teaspoon 5mlVanilla
1 cup 198g / 7ozButter - (2 sticks) - softened
3 8.3333333333333E+14/1.25E+15 cups 586g / 20ozBrown sugar - (packed)
3/4 cup 148g / 5.2ozGranulated sugar
10 1/2 cups 656g / 23ozAll-purpose flour
1 teaspoon 5mlSalt
1 teaspoon 5mlGround cinnamon
2 teaspoons 10mlBaking soda
2 cups 474mlQuick-cooking oatmeal
3/4 cup 109g / 3.8ozChopped pecans - (optional)

Recipe Instructions

Combine eggs, raisins, and vanilla in bowl; let stand, covered, for 1 hour.

Preheat oven to 350 degrees. In a large bowl, cream butter and sugars until fluffy. In a medium bowl, stir together flour, salt, cinnamon and baking soda. Gradually stir flour mixture into butter and sugar. Mix well.

Add raisin mixture, oatmeal and pecans. Don't worry if dough seems dry.

Drop by tablespoonfuls about 2 inches apart onto an ungreased cookie sheet. Bake for 10 to 12 minutes, until lightly browned. Let cool on rack.

Yield: About 2 1/2 dozen.
