Onion Puffs Recipe - Cooking Index
1 1/2 cups | 355ml | Water |
3/4 cup | 148g / 5.2oz | Unsalted butter - (1 1/2 sticks) - divided |
2 cups | 125g / 4.4oz | Coarsely chopped onions |
2 teaspoons | 10ml | Salt |
1 1/2 cups | 93g / 3.3oz | All-purpose flour |

1 cup | 146g / 5.1oz | Freshly grated Parmesan cheese - plus more |

Preheat oven to 400 degrees. Grease two cookie sheets.
Bring water to a boil in a medium saucepan. Add 1/2 cup butter.
Meanwhile, saute onions in remaining 1/4 cup butter until wilted, about 5 minutes. Set aside.
When butter has melted in water and mixture has returned to a boil, add salt and flour. Reduce heat to low; stir for a few minutes, until mixture makes a ball and pulls away from the sides of the pan.
Remove from heat. Beat in the eggs, 1 at a time, mixing well after each addition. Combine 1 cup cheese with dough. Add onions, mixing thoroughly.
Drop heaping tablespoons of dough onto greased cookie sheet. Brush tops with milk; sprinkle with additional Parmesan cheese.
Bake until golden and puffy, about 35 to 40 minutes.
Yields 24 puffs.
