Goulash Soup Recipe - Cooking Index

1 lb | 454g / 16oz | Lean boneless beef round - cut into 1" pieces |

1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
3 teaspoons | 15ml | All-purpose potatoes - peeled and cubed (small) |

1 teaspoon | 5ml | Dried marjoram |
In a large nonstick saucepan or Dutch oven, heat the oil. Add the onions and garlic; cook, stirring as needed, until the onions are softened, about 5 minutes.
Add the broth, beef, paprika, caraway seeds and pepper; bring to a boil. Reduce the heat and simmer, covered, stirring as needed, until the beef is almost tender, about 45 minutes.
Increase the heat and stir in the potatoes and carrots; return to a boil. Reduce the heat and simmer, covered, stirring as needed, until the vegetables are tender and the beef is cooked through, about 20 minutes.
Add the tomato and marjoram; cook until the tomato is heated through, about 3 minutes.
This recipe yields 4 servings.
