1 1/3 cups | 53g / 1.9oz | Whole bran cereal |
1 3/4 cups | 109g / 3.8oz | Whole-wheat flour |

1 teaspoon | 5ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
1/2 cup | 80g / 2.8oz | Light brown sugar - (firmly packed) |

3 tablespoons | 45ml | Vegetable oil |

Preheat the oven to 400 degrees. Spray eighteen 2 3/4-inch muffin cups with nonstick cooking spray.
In a large bowl, combine the buttermilk and cereal; let stand 5 minutes.
Meanwhile in a medium bowl, combine the flour, cinnamon, baking soda, baking powder and salt.
Add the sugar, prunes, egg and oil to the cereal mixture; mix well with a wooden spoon. Stir in the dates, apples and the flour mixture until just combined (do not overmix).
Spoon the batter evenly into the cups, filling each about two-thirds full. Bake until golden and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool on a rack 10 minutes; remove from the cups and cool completely on the rack.
This recipe yields 18 servings.
