No Work Salmon Chowder

Recipe Ingredients

1   Salmon - (15 oz) - drained, patted dry
1   Frozen corn - (10 oz) - thawed
2   Stewed tomatoes - (14 1/2 oz ea) - chopped
2   Clam juice - (8 oz ea)
1   Garlic clove - peeled, smashed
1/2 cup 80g / 2.8ozLong-grain rice
  Salt - to taste
  Freshly-ground black pepper - to taste
  Tabasco sauce - thinly sliced
  Green onion - thinly sliced

Recipe Instructions

Combine all of the ingredients and simmer, about 20 minutes, covered until rice is tender. Season to taste with salt, pepper and Tabasco sauce and garnish with the scallions.

This recipe yields 4 servings.
