1 | Salmon - (15 oz) - drained, patted dry | |
1 | Frozen corn - (10 oz) - thawed | |
2 | Stewed tomatoes - (14 1/2 oz ea) - chopped | |
2 | Clam juice - (8 oz ea) | |
1 | Garlic clove - peeled, smashed | |
1/2 cup | 80g / 2.8oz | Long-grain rice |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Tabasco sauce - thinly sliced | ||
Green onion - thinly sliced |
Combine all of the ingredients and simmer, about 20 minutes, covered until rice is tender. Season to taste with salt, pepper and Tabasco sauce and garnish with the scallions.
This recipe yields 4 servings.
