Minted Couscous Recipe - Cooking Index
1 cup | 237ml | Dried couscous |
1 1/4 cups | 296ml | Boiling chicken broth or water |
Olive oil | ||
1/2 cup | 20g / 0.7oz | Fresh mint leaves - chopped |
4 | Plum tomatoes - seeded, and | |
Cut into 1/4" dice | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Set couscous in a bowl. Pour boiling broth or water over it and let steep for 1/2 hour.
Right before eating, heat some olive oil in a skillet. Add couscous and cook, stirring constantly, until couscous is warmed through. Remove it from the heat and add mint and fresh tomatoes; season to taste with salt and pepper.
This recipe yields 2 servings.
