Cucumber-Tomato Salsa Recipe - Cooking Index
1 cup | 146g / 5.1oz | Seeded 1/4"diced cucumbers |
1 cup | 62g / 2.2oz | Seeded 1/4" diced tomatoes |
1 teaspoon | 5ml | Seeded minced hot jalapeno pepper |
1/4 cup | 59ml | Scallions |
Lemon juice - to taste |
Mix the ingredients together right before serving. Also a great topping for broiled or grilled fish or poultry.
This recipe yields 2 cups.
