Sweet Avocado Puree Recipe - Cooking Index
2 | Ripe chilled avocados - seeded, diced | |
1/4 cup | 59ml | Fresh lime or lemon juice |
1/3 cup | 65g / 2.3oz | Confectioner's sugar - or more to taste |
Raspberries | ||
Fresh mint sprigs - for garnish | ||
Chopped pistachio nuts - for garnish |
With the back of a spoon, press the avocados through a sieve into a bowl. Add the lime juice and sweeten with sugar.
Transfer the puree to 4 chilled wine glasses and garnish with raspberries, mint and/or pistachio nuts.
This recipe yields 4 servings.
