Salsa Marinara

Recipe Ingredients

1 cup 62g / 2.2ozMinced onion
2   Garlic cloves - minced
1/3 cup 78mlOlive oil
2 lbs 908g / 32ozFirm ripe tomatoes - cored, and
  Cut into 1" pieces
  (or two 28-oz cans peeled, whole Italian
  Plum tomatoes)
  Salt - to taste
  Freshly-ground pepper - to taste

Recipe Instructions

In a large saucepan set over moderate heat cook the onion, garlic and oil, stirring occasionally for 5 minutes. Add the tomatoes and salt and pepper. Simmer, covered, stirring occasionally for 20 minutes. If desired, puree the mixture in a food processor or blender or through the disk of a food mill.

This recipe yields 3 cups of sauce.
