Salsa Marinara Recipe - Cooking Index
1 cup | 62g / 2.2oz | Minced onion |
2 | Garlic cloves - minced | |
1/3 cup | 78ml | Olive oil |
2 lbs | 908g / 32oz | Firm ripe tomatoes - cored, and |
Cut into 1" pieces | ||
(or two 28-oz cans peeled, whole Italian | ||
Plum tomatoes) | ||
Salt - to taste | ||
Freshly-ground pepper - to taste |
In a large saucepan set over moderate heat cook the onion, garlic and oil, stirring occasionally for 5 minutes. Add the tomatoes and salt and pepper. Simmer, covered, stirring occasionally for 20 minutes. If desired, puree the mixture in a food processor or blender or through the disk of a food mill.
This recipe yields 3 cups of sauce.
