Microwave Medley Recipe - Cooking Index
1/2 lb | 227g / 8oz | Zucchini or yellow squash |
4 | Cherry tomatoes - (to 6) | |
1 teaspoon | 5ml | Water |
1 tablespoon | 15ml | Butter |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Wash zucchini and remove stem ends. Cut it in half lengthwise and remove the seeds with a spoon. Cut the zucchini (leaving skin on) into 1/4-inch dice. Halve or quarter cherry tomatoes, depending on their size.
Set squash in microwavable round pan with 1 teaspoon of water and season with salt and pepper. Cover and microwave for 3 minutes or until crisp but somewhat tender.
Remove the cover, stir the vegetables, add butter and tomatoes. Microwave uncovered for 1 minute more. Stir and serve immediately.
This recipe yields 2 servings.
