Gingered Soup And Pasta Recipe - Cooking Index
1 tablespoon | 15ml | Sesame oil - (to 2 tbspns) |
1 | Fresh ginger - (quarter-size) - minced | |
1 | Garlic clove - minced | |
6 cups | 1422ml | Chicken broth |
1/2 | Scallions - sliced | |
1 | Cilantro - stems removed | |
2 cups | 474ml | Broken-up vermicelli |
Lemon wedges |
Saute ginger and garlic in sesame oil for a few seconds. Add broth and bring to a boil. Add pasta and simmer 5 minutes or until done. Add scallion and cilantro and serve.
Let each person garnish their portion with fresh lemon at last minute so as not to discolor green of soup.
This recipe yields 4 servings.
