Stuffed Cucumber Appetizers Recipe - Cooking Index
2 tablespoons | 30ml | Cucumbers (medium) |
1 | Unsalted water-packed tuna - drained | |
1/2 cup | 118ml | Fat-free mayonnaise |
1/4 cup | 27g / 1oz | Finely-chopped celery |
1 | Finely-chopped apple, skin on | |
Shredded lettuce |
Cut medium-sized cucumbers in half lengthwise. Remove the seeds. In a small bowl, combine the remaining ingredients. Stuff the cucumber halves mounding to use all the tuna mixture. Wrap in cellophane or waxed paper. Chill until just before serving.
Cut into 1-inch chunks. Stand cucumber on end and serve on a bed of shredded lettuce.
This recipe yields 32 pieces.
