This citrus spinach salad is an excellent healthy substitute for the traditional spinach salad with heavy bacon dressing. 1 cup | 237ml | Fresh orange segments |
1 | Tart apple - thinly sliced | |
1 | Red onion - thinly sliced (small) | |
1 cup | 237ml | Plain - non-fat yogurt |
2 teaspoons | 10ml | Lemon juice |
2 tablespoons | 30ml | Honey |
1/2 teaspoon | 2.5ml | Curry powder |
1 teaspoon | 5ml | Dijon mustard |
Arrange spinach, orange segments and sliced onions onto plates.
In a small bowl, combine the non-fat yogurt, lemon juice, honey, curry powder and mustard. Whisk until smooth. Spoon over salads.
