Recipe Ingredients

6 cups 240g / 8.5ozSpinach leaves - washed, dried
1 cup 237mlFresh orange segments
1   Tart apple - thinly sliced
1   Red onion - thinly sliced (small)
1 cup 237mlPlain - non-fat yogurt
2 teaspoons 10mlLemon juice
2 tablespoons 30mlHoney
1/2 teaspoon 2.5mlCurry powder
1 teaspoon 5mlDijon mustard

Recipe Instructions

Arrange spinach, orange segments and sliced onions onto plates.

In a small bowl, combine the non-fat yogurt, lemon juice, honey, curry powder and mustard. Whisk until smooth. Spoon over salads.

This recipe yields 6 servings.
