Spicy Low-Fat Dip Recipe - Cooking Index
2 | Black beans - (15 oz ea) - undrained | |
2 | Jalapeño peppers - chopped | |
(for less heat, remove the seeds) | ||
2 | Garlic cloves - chopped | |
1 cup | 62g / 2.2oz | Chopped seeded unpeeled tomatoes |
1/4 cup | 15g / 0.5oz | Chopped red onion |
2 tablespoons | 30ml | Minced fresh cilantro |
Juice of one lime | ||
Salt - to taste | ||
Freshly-ground balck pepper - to taste |
Drain beans, reserving 1/4 cup of the liquid. Add beans, reserved juice, jalapeños, garlic, salt and pepper to food processor bowl or blender. Process until smooth. Spoon into a serving bowl.
Combine tomato, red onion, cilantro and lime juice; stir well and spoon over bean mixture. Serve with baked tortilla or pita chips.
