Spicy Low-Fat Dip

Recipe Ingredients

2   Black beans - (15 oz ea) - undrained
2   Jalapeño peppers - chopped
  (for less heat, remove the seeds)
2   Garlic cloves - chopped
1 cup 62g / 2.2ozChopped seeded unpeeled tomatoes
1/4 cup 15g / 0.5ozChopped red onion
2 tablespoons 30mlMinced fresh cilantro
  Juice of one lime
  Salt - to taste
  Freshly-ground balck pepper - to taste

Recipe Instructions

Drain beans, reserving 1/4 cup of the liquid. Add beans, reserved juice, jalapeños, garlic, salt and pepper to food processor bowl or blender. Process until smooth. Spoon into a serving bowl.

Combine tomato, red onion, cilantro and lime juice; stir well and spoon over bean mixture. Serve with baked tortilla or pita chips.

This recipe yields 3 cups.
