Whole Fish Baked In A Salt Crust

Recipe Ingredients

48 oz 1363gCleaned whole fish
8 lbs 3632g / 128ozSea salt
4   Egg white
12 sections  Tarragon
  Pepper

Recipe Instructions

Preheat the oven to gas mark 5, 375F, 190 C.

Season the fish with a little black pepper. Combine the sea salt with the egg white and 2 fl oz water.

Spread half the salt mixture on a baking tray or oven proof dish, then lay the fish on top.

Put the tarragon on top of the fish and cover with the remaining alt mixture.

Bake in the reheated oven for 20 minutes.

Remove, break the top layer of salt away and serve the fish from it dish.
