2 lbs | 908g / 32oz | Red potatoes |
1/4 cup | 15g / 0.5oz | Diced red onion |
1/4 cup | 15g / 0.5oz | Diced white onion |
1 | Celery rib - sliced | |
1/2 cup | 73g / 2.6oz | Diced bell pepper |
1/2 cup | 118ml | Nonfat mayonnaise |
1/3 cup | 78ml | Nonfat sour cream |
2 tablespoons | 30ml | Dijon mustard |
2 tablespoons | 30ml | Minced fresh dill |
Ground red pepper - to taste | ||
1 tablespoon | 15ml | Cider vinegar |
Freshly-ground black pepper - to taste |
Boil the potatoes until tender. Set aside. When cool enough to handle, cut into 1-inch cubes.
In a large bowl, combine potatoes with remaining ingredients (adding red pepper according to individual taste in hotness), toss gently and chill.
This recipe yields 8 servings (3/4 cup each).
