Sweet 'n Sour Tuna Rice Salad Recipe - Cooking Index
| 3 tablespoons | 45ml | Red wine vinegar |
| 2 teaspoons | 10ml | Granulated sugar |
| 1/4 teaspoon | 1.3ml | Salt |
| 1/4 teaspoon | 1.3ml | Pepper - (or up to 1/2 tsp.) |
| 8 oz | 227g | Water-packed tuna - - drained (reserve liquid) |
| Broken into chunks | ||
| 2 cups | 320g / 11oz | Cooked long grain rice - - (white or brown) |
| 2 cups | 125g / 4.4oz | Chopped peeled tomatoes - - (fresh) |
| 1 cup | 62g / 2.2oz | Finely diced red onion |
| 1 cup | 110g / 3.9oz | Finely diced celery |
| 1/2 cup | 73g / 2.6oz | Chopped scallions |
| 1/2 cup | 118ml | Frozen peas - thawed |
In a small bowl, combine vinegar, sugar, salt, pepper and 1 tablespoon of reserved tuna liquid.
In a large bowl combine remaining ingredients; add vinegar mixture and toss.
Let stand for 10 minutes; toss again and serve.
