Snapper De Vera Cruz Recipe - Cooking Index
| 2 lbs | 908g / 32oz | Snapper fillets |
| 1 tablespoon | 15ml | Lime juice |
| 3 cups | 711ml | Picante sauce - (fresh) |
| 1 tablespoon | 15ml | Tomato paste |
| 1/2 cup | 73g / 2.6oz | Green olives - chopped |
Sprinkle lime juice over fish.
In large skillet mix salsa and tomato paste.
Place fish in single layer in sauce. Cover and simmer 15-20 minutes.
Remove fish. Add olives to sauce and boil 2-3 minutes to thicken.
Pour over fish and serve.
