Sinigang Na Bangus (Milkfish In Sour Broth)

Recipe Ingredients

1 1/2 lbs 681g / 24ozBangus - (milkfish), or white fish, dress
2 cups 474mlWater
3 cups 187g / 6.6ozTomatoes - sliced (medium)
1 cup 62g / 2.2ozOnion - sliced (medium)
6   Green sampaloc - (tamarind)
1   Banana heart - drained
2 cups 320g / 11ozGreen beans - cut diagonally in h
1 cup 40g / 1.4ozSpinach leaves - (or, mustard greens or
1 teaspoon 5mlSalt
1 tablespoon 15mlPatis - (fish sauce)

Recipe Instructions

1. Slice fish and cut into 4-6 pieces. Salt all over.

2. Boil water and tamarind pods until pods are tender. Remove tamari mash and strain back into the boiling water. (optional)

3. Add tomatoes, onions and green beans to boiling mixture and cook 1 minutes or until vegetables are almost cooked. Add fish, banana heart and patis.

5. Bring to a boil. Lower heat and simmer 3-5 minutes. Remove from heat, add spinach leaves, and let stand for 5 minutes.

6. Serve with bagoong or patis (fish sauce).
