1/4 cup | 36g / 1.3oz | Grated parmesan cheese |
2 tablespoons | 30ml | Margarine or butter melted |
1/2 teaspoon | 2.5ml | Salt |
1 lb | 454g / 16oz | Fresh or frozen fish fillets - cooked and flaked |

Cook manicotti in boiling salted water according to package directions; drain. Cook spinach according to package directions; drain well, pressing out excess liquid.
Meanwhile, prepare cheese sauce. In saucepan cook onion and garlic. In the 2 tablespoons margarine or butter until tender but not brown.
Blend in flour. Add milk all at once; cook and stir until thickened and bubbly. Stir in Swiss cheese until melted.
Combine 1/2 cup of the sauce with the spinach, parmesan, the 2 tablespoons melted margarine or butter, and the salt. Fold in flaked fish. Stuff manicotti shells with fish mixture.
Pour half of the remaining sauce into a 1 1/2 quart oval au gratin dish or a 10 x 6 x 2 inch baking dish. Place manicotti atop sauce. Pour remaining sauce over manicotti.
Cover and bake in 350 oven for 30 to 35 minutes or until heated through. Sprinkle ground nutmeg over manicotti before serving, if desired. Makes 6 servings.
