Seafood Paella Recipe - Cooking Index
1 | Onion, chopped (large) | |

1/4 cup | 59ml | Vegetables oil |
1 1/2 cups | 240g / 8.5oz | Rice, uncooked |
1/8 teaspoon | 0.6ml | Saffron |
1 | Bay leaf | |
3 cups | 711ml | Chicken broth, or more |
1 lb | 454g / 16oz | Shrimp, peeled/deveined |
18 | Clams | |
18 | Mussels, washed | |
2 tablespoons | 30ml | Pimentos, chopped |
1 cup | 237ml | Baby peas |
1) Saute onions and garlic in the oil and add the rice and saffron and saute for 5 more minutes.
Stir in the bay leaf and 2 cups of the broth and simmer, uncovered, for 10 minutes..
2) Add the remaining broth and the shrimp, simmer for 5 minutes and add the clams and the mussels and any additional broth (if necessary).
4) Cook for 10 minutes or until the shells open...
5) Discard the shells and the bay leaf, adding the pimento and the peas. Salt and pepper to taste.
6) Heat to desired serving temperature and serve.
