Waldorf Chicken Salad Recipe - Cooking Index
This recipes has an advantage over traditional Waldorf salad. It adds lean protein for a main-dish salad.
Type: Low Fat2 cups | 125g / 4.4oz | Cubed cooked chicken breast |
2 cups | 292g / 10oz | Cored and chopped Granny Smith apples |
1 cup | 110g / 3.9oz | Chopped celery |
1/4 cup | 40g / 1.4oz | Raisins |
2 tablespoons | 30ml | Reduced-calorie mayonnaise |
2 tablespoons | 30ml | Low-fat plain yogurt |
1/4 teaspoon | 1.3ml | Ground nutmeg |
1/4 teaspoon | 1.3ml | Ground cinnamon |
Freshly-ground black pepper - to taste | ||
Lettuce leaves |
In a large bowl, combine the chicken, apples, celery and raisins.
In a cup, stir together the mayonnaise, yogurt, nutmeg and cinnamon. Add to the chicken mixture and toss until coated. Season to taste with the pepper. Serve on lettuce-lined salad plates.
This recipe yields 4 servings.
