Waldorf Chicken Salad

This recipes has an advantage over traditional Waldorf salad. It adds lean protein for a main-dish salad.

Recipe Ingredients

2 cups 125g / 4.4ozCubed cooked chicken breast
2 cups 292g / 10ozCored and chopped Granny Smith apples
1 cup 110g / 3.9ozChopped celery
1/4 cup 40g / 1.4ozRaisins
2 tablespoons 30mlReduced-calorie mayonnaise
2 tablespoons 30mlLow-fat plain yogurt
1/4 teaspoon 1.3mlGround nutmeg
1/4 teaspoon 1.3mlGround cinnamon
  Freshly-ground black pepper - to taste
  Lettuce leaves

Recipe Instructions

In a large bowl, combine the chicken, apples, celery and raisins.

In a cup, stir together the mayonnaise, yogurt, nutmeg and cinnamon. Add to the chicken mixture and toss until coated. Season to taste with the pepper. Serve on lettuce-lined salad plates.

This recipe yields 4 servings.
