Scallops With Basil-Lemon Sauce

Recipe Ingredients

4 tablespoons 60mlButter
1   Garlic clove - minced
1 1/2 lbs 681g / 24ozBay or sea scallops - rinsed
  Well dried
3 tablespoons 45mlFresh basil leaves - chopped
2 tablespoons 30mlFresh lemon juice
  Salt and freshly ground - pepper to taste

Recipe Instructions

1. In large, heavy skillet, over medium heat, melt I Can't Believe It's Not Butter! Add garlic and cook until softened. Do not brown.

2. Add scallops and basil and saute over medium-high heat, stirring constantly, for 2 minutes.

3. Add lemon juice and continue cooking, stirring constantly, 2 to 3 minutes longer. Season with salt and pepper. Serve immediately. Yield: 4 servings.
