Scallops With Basil-Lemon Sauce Recipe - Cooking Index
4 tablespoons | 60ml | Butter |
1 | Garlic clove - minced | |
1 1/2 lbs | 681g / 24oz | Bay or sea scallops - rinsed |
Well dried | ||
3 tablespoons | 45ml | Fresh basil leaves - chopped |
2 tablespoons | 30ml | Fresh lemon juice |
Salt and freshly ground - pepper to taste |
1. In large, heavy skillet, over medium heat, melt I Can't Believe It's Not Butter! Add garlic and cook until softened. Do not brown.
2. Add scallops and basil and saute over medium-high heat, stirring constantly, for 2 minutes.
3. Add lemon juice and continue cooking, stirring constantly, 2 to 3 minutes longer. Season with salt and pepper. Serve immediately. Yield: 4 servings.
