1/4 cup | 59ml | Olive oil |
5 | Chopped garlic cloves | |
1 lb | 454g / 16oz | Bay or sea scallops |
3/4 cup | 177ml | Slivered red peppers |
3/4 cup | 177ml | Slivered green peppers |
1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 teaspoon | 2.5ml | Tabasco pepper sauce |
1/4 teaspoon | 1.3ml | Salt |
2 tablespoons | 30ml | Drained capers |
Slivers of red and green bell peppers give this quickly prepared dish vibrant color, and the garlic, Tabasco sauce and capers provide lots of flavor.
In a large skillet, heat the oil and add the garlic. Cook until golden, about 1 minute. Add the scallops, peppers, onion, Tabasco sauce and salt.
Stirring constantly, cook for 5 minutes, or until the scallops turn white and the vegetables are crisp-tender. Stir in the capers and serve immediately.
