Scallops And Snow Peas Recipe - Cooking Index
| 2 tablespoons | 30ml | Butter | 
| 1 teaspoon | 5ml | Grated gingerroot | 
| 1 teaspoon | 5ml | Red jalapeno pepper (medium) | 
| Seeded and minced | ||
| 4 oz | 113g | Trimmed snow peas | 
| 1/2 lb | 227g / 8oz | Sea scallops | 
| 1 tablespoon | 15ml | Fresh lemon juice | 
| 1/2 teaspoon | 2.5ml | Balsamic vinegar | 
| 1 tablespoon | 15ml | Minced scallion | 
| Salt to taste | ||
| Fresh ground pepper to taste | 
Heat butter in large skillet. Add gingerroot and jalapeno pepper and saute over medium heat 1 to 2 minutes.
Do not allow to burn. Add snow peas and saute until they glisten, 2 to 3 minutes.
Add scallops and saute over medium high heat until cooked through, turning over once, 5 to 7 minutes.
Add lemon juice, vinegar and scallion.
Season with salt and pepper.
Cook over high heat until mixture is hot and flavors blend, about 1 minute.
