Scallops And Snow Peas

Recipe Ingredients

2 tablespoons 30mlButter
1 teaspoon 5mlGrated gingerroot
1 teaspoon 5mlRed jalapeno pepper (medium)
  Seeded and minced
4 oz 113gTrimmed snow peas
1/2 lb 227g / 8ozSea scallops
1 tablespoon 15mlFresh lemon juice
1/2 teaspoon 2.5mlBalsamic vinegar
1 tablespoon 15mlMinced scallion
  Salt to taste
  Fresh ground pepper to taste

Recipe Instructions

Heat butter in large skillet. Add gingerroot and jalapeno pepper and saute over medium heat 1 to 2 minutes.

Do not allow to burn. Add snow peas and saute until they glisten, 2 to 3 minutes.

Add scallops and saute over medium high heat until cooked through, turning over once, 5 to 7 minutes.

Add lemon juice, vinegar and scallion.

Season with salt and pepper.

Cook over high heat until mixture is hot and flavors blend, about 1 minute.
