Two-Cheese Cheesecake Recipe - Cooking Index
8 oz | 227g | Light cream cheese |
1 cup | 146g / 5.1oz | Low-fat ricotta cheese |
2 | Eggs - separated | |
1/4 cup | 59ml | Honey |
1/4 cup | 40g / 1.4oz | Golden raisins |
3 tablespoons | 45ml | Cornstarch |
1 tablespoon | 15ml | Grated orange rind |
1/3 cup | 48g / 1.7oz | Amaretti cookie or graham cracker crumbs |
In a large bowl, stir the cream cheese and ricotta until smooth. Stir in the egg yolks, honey, raisins, cornstarch and orange rind, mixing until thoroughly combined.
In a medium bowl, whip the egg whites for about two minutes, or until they form soft peaks, then fold them into the cheese mixture.
Coat a 9-inch pie plate with non-stick spray and cover with the amaretti crumbs, then pour in the cheese mixture. Bake at 400 degrees for 30 minutes, or until golden and set.
This recipe yields 12 servings.
