Salmon Pasta Salad Recipe - Cooking Index
15 1/2 oz | 440g | Canned Alaska salmon |
8 oz | 227g | Fusilli or macaroni - cooked, drained and co |
1 | Cherry tomatoes - cut in half | |
2 cups | 474ml | Sliced cucumber |
1 cup | 146g / 5.1oz | Mozzarella cheese - cut into thin strips |
1/2 cup | 73g / 2.6oz | Chopped parsley |
1/4 cup | 36g / 1.3oz | Grated parmesan cheese |
Lemon Dressing | ||
3/4 cup | 177ml | Olive oil |
1/4 cup | 59ml | Lemon juice |
2 | Garlic cloves - minced | |
1/2 teaspoon | 2.5ml | Dill weed |
1/2 teaspoon | 2.5ml | Grated lemon peel |
Black pepper - to taste |
Drain and flake salmon.
Toss flaked salmon with remaining ingredients in large serving bowl.
Toss with Lemon Dressing and serve.
Lemon Dressing: Whisk together ingredients until well combined.
