Pickled Herring - 1 Recipe - Cooking Index
7 lbs | 3178g / 112oz | Fresh herring fillets - * see note |
2 1/2 | White vinegar | |
6 | Cinnamon sticks | |
1/4 cup | 59ml | Allspice - (whole) |
1/4 cup | 10g / 0.4oz | Mace - (leaves) |
1/4 cup | 15g / 0.5oz | Black peppercorns |
1/4 cup | 59ml | Whole cloves |
3 cups | 187g / 6.6oz | Onions - sliced thinly (large) |
1 3/4 cups | 346g / 12oz | Sugar |
* skins left on and cut into 1 inch pieces.
Combine all ingredients except herring and boil for 15 minutes.
Add herring, let simmer for 15 minutes.
Let cool in liquid; refrigerate.
