Pickled Herring - 1

Recipe Ingredients

7 lbs 3178g / 112ozFresh herring fillets - * see note
2 1/2   White vinegar
6   Cinnamon sticks
1/4 cup 59mlAllspice - (whole)
1/4 cup 10g / 0.4ozMace - (leaves)
1/4 cup 15g / 0.5ozBlack peppercorns
1/4 cup 59mlWhole cloves
3 cups 187g / 6.6ozOnions - sliced thinly (large)
1 3/4 cups 346g / 12ozSugar

Recipe Instructions

* skins left on and cut into 1 inch pieces.

Combine all ingredients except herring and boil for 15 minutes.

Add herring, let simmer for 15 minutes.

Let cool in liquid; refrigerate.
