Pasta With Mussels Recipe - Cooking Index
3 tablespoons | 45ml | Butter |
3 tablespoons | 45ml | Olive oil |
2 | Garlic chopped | |
4 oz | 113g | Canned or frozen - mussels, up to 6 |
1 oz | 28g | Green pepper diced (small) |
1/2 cup | 118ml | Red wine |
1 | Italian tomatoes - (crushed by hand) | |
1/4 cup | 36g / 1.3oz | Chopped fresh parsley |
Cheese for topping - (opt.) |
Melt butter in olive oil.
Saute garlic and pepper for 2-3 minutes.
Add tomatoes and wine and simmer for 30 minutes.
Add mussels and cook on low heat for 15 minutes.
Mix in fresh parsley and turn off heat. Let sit for 10 minutes Season with salt and pepper to taste.
Serve over hot pasta.
