Oyster Stew Recipe - Cooking Index
2 tablespoons | 30ml | Margarine |
1/2 cup | 55g / 1.9oz | Chopped celery |
1 1/2 | Oysters with liquid | |
2 cups | 474ml | Evaporated skim milk |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
2 tablespoons | 30ml | Parsley |
In the top half of a double boiler, melt margarine and saute chopped celery for two minutes. Add oysters with liquid, evaporated skim milk, salt and pepper. Place on top of double boiler (with boiling water). Stew is done when milk is hot and oysters float and have curly edges. Garnish with parsley.
This recipe yields four 1 cup servings.
