Oysters A La Bookbinder

Recipe Ingredients

12   Oysters
1   Mushroom-large - finely chopped
1 teaspoon 5mlOnion-minced
3 tablespoons 45mlButter
1 teaspoon 5mlFlour
1/2 cup 118mlMilk-warm
1/4 cup 59mlOatmeal-cooked
  Salt and pepper
1 tablespoon 15mlParsley-minced
3 tablespoons 45mlParmesan cheese-grated

Recipe Instructions

Wash and shuck oysters, putting them on the half shell. Saute the mushroom and onion in 1 tbs. butter until soft but not browned. Add flour and stir to blend. Add milk and stir until thickened.

Add oatmeal and stir well. Season to taste with salt and pepper. Stir in parsley.

Place oysters under broiler for 4 minutes Remove and cover each oyster with some sauce. Sprinkle with Parmesan cheese.

Melt 2 tbs. butter and drizzle a few drops over oysters. Return to broiler and cook for 5 minutes or until browned.
