Oyster Patties - 2 Recipe - Cooking Index
1 | Green onions - chop fine | |
2 tablespoons | 30ml | Parsley - finely chopped |
1 tablespoon | 15ml | Onion - grated or fine chop (small) |
48 tablespoons | 720ml | Patty shells (small) |
2 tablespoons | 30ml | Butter or oleo |
1 | Cream mushroom soup | |
1 tablespoon | 15ml | Flour |
1/4 teaspoon | 1.3ml | Lemon juice |
Black and red pepper as needed | ||
48 | Oysters--cut in half if sm.> | |
Diced if large. |
Saute green onions in oleo until tender. Blend in flour until smooth. Add onions, mushroom soup, black and red pepper, parsley, oysters and lemon juice.
Simmer 10 minutes. Spoon into patty shells. When ready to serve, bake at 250 - 300F for 15 minutes.
These freeze well and can be frozen on cookie sheet; then place in plastic bag for easy storage
Yield: 4 dozen Oyster Patties
