Oyster Patties - 2

Recipe Ingredients

1   Green onions - chop fine
2 tablespoons 30mlParsley - finely chopped
1 tablespoon 15mlOnion - grated or fine chop (small)
48 tablespoons 720mlPatty shells (small)
2 tablespoons 30mlButter or oleo
1   Cream mushroom soup
1 tablespoon 15mlFlour
1/4 teaspoon 1.3mlLemon juice
  Black and red pepper as needed
48   Oysters--cut in half if sm.>
  Diced if large.

Recipe Instructions

Saute green onions in oleo until tender. Blend in flour until smooth. Add onions, mushroom soup, black and red pepper, parsley, oysters and lemon juice.

Simmer 10 minutes. Spoon into patty shells. When ready to serve, bake at 250 - 300F for 15 minutes.

These freeze well and can be frozen on cookie sheet; then place in plastic bag for easy storage

Yield: 4 dozen Oyster Patties
