Mersey Point Salmon Sauce

Recipe Ingredients

1/4 lb 113g / 4ozSalmon bits
3 tablespoons 45mlButter or margarine
3 tablespoons 45mlFlour
1 1/3 cups 315mlFish or chicken stock
1 tablespoon 15mlMilk or cream
1 teaspoon 5mlDill
1 tablespoon 15mlCapers
  Pepper
  Lemon juice

Recipe Instructions

Melt butter, stir in flour and blend. Slowly add the stock and milk.

When sauce is smooth and boiling, add the salmon bits, dill, and capers. Add pepper and lemon to taste.

This sauce is great served over rice, fettuccini, or pastry. Serve it as a hors d'oeuvre, appetizer, or main course.
