Lobster Newburg - Pauline's Favorite Recipe - Cooking Index
6 tablespoons | 90ml | Butter or margarine |
2 tablespoons | 30ml | Flour |
3 cups | 187g / 6.6oz | Cooked lobster meat |
1/8 teaspoon | 0.6ml | Nutmeg |
Paprika | ||
1 teaspoon | 5ml | Salt |
3 tablespoons | 45ml | Sherry |
3 | Yolks | |
2 cups | 474ml | Milk or light cream |
Toast slices |
In double boiler top, melt butter; stir in flour, lobster, nutmeg, paprika, salt, sherry.
Beat yolks slightly; add cream or milk; mix well.
Slowly stir yolks into lobster; cook over hot water, stirring, until just thickened.
This recipe is equally good with crab, shrimp or scallops, or a mixture.
