Italian-Style Fish Fillets Recipe - Cooking Index
2 cups | 125g / 4.4oz | Tomatoes - diced (large) |
1 teaspoon | 5ml | Dried basil |
1/2 teaspoon | 2.5ml | Dried oregano |
2 | Garlic - finely minced | |
Salt - to taste | ||
Pepper - to taste | ||
1 1/2 lbs | 681g / 24oz | Fresh or frozen fish fillets |
Thaw fish if frozen. Mix tomatoes, basil, oregano, garlic, salt and pepper in a 4 c. Mixing bowl.
Microwave uncovered on HIGH for 4 to 5 minutes. Keep warm. Rinse fillets under cold water.
Pat dry. Place fillets in shallow microwave dish, thicker portion to the outside. Cover with plastic wrap, vented.
Microwave on HIGH 3 to 6 minutes until fish is slightly translucent in the center, turning dish every 2 minutes. Allow fish to stand, covered, 3 to 5 minutes to complete cooking. Drain. Top fillets with dipping sauce.
