Gently Persuasive Prawns

Recipe Ingredients

1 lb 454g / 16ozRaw prawns or shrimp
4 tablespoons 60mlSweet butter
2 tablespoons 30mlMinced shallots
1   Garlic - minced
1/3 cup 78mlBrut champagne
2 teaspoons 10mlFresh lemon juice
1 tablespoon 15mlCalvert's Cedar Street dill mustard

Recipe Instructions

Shell and devein prawns. Melt butter in saute pan over medium high heat.

Add shallots and garlic and saute 1 minute. Add prawns and saute quickly until just pink.

Stir in champagne, lemon juice and mustard, and simmer 3 minutes. Serve over a bed of hot rice or pasta.

Garnish with fresh chopped parsley.
