Garlicky Baked Shrimp Recipe - Cooking Index
Vegetable cooking spray | ||
1 1/4 lbs | 567g / 20oz | Medium shrimp - peeled and deveined |
1/2 cup | 73g / 2.6oz | Dry breadcrumbs |
3 tablespoons | 45ml | Finely chopped fresh parsley |
1 teaspoon | 5ml | Grated lemon rind |
1/4 teaspoon | 1.3ml | Salt |
3 | Garlic - minced | |
2 tablespoons | 30ml | Fresh lemon juice |
4 teaspoons | 20ml | Olive oil |
Coat 4 individual gratin dishes with cooking spray. Divide shrimp evenly among dishes; set aside.
Combine the breadcrumbs, parsley, lemon rind, salt, and garlic in a bowl; stir in lemon juice and oil. Sprinkle the breadcrumb mixture evenly over shrimp.
Place dishes on a baking sheet. Bake at 400F for 13 minutes or until shrimp are done and breadcrumbs are lightly browned. Yield: 4 servings.
