Fillet Of Salmon Poached In Lemon And Wine Recipe - Cooking Index
1/3 cup | 78ml | Lemon juice |
1/2 cup | 118ml | Dry white wine |
4 cups | 948ml | Salmon fillets (large) |
2 tablespoons | 30ml | Minced parsley |
1. In a large skillet over medium-high heat, bring lemon juice and wine to a boil. Lower heat to medium. Add salmon and cover skillet.
2. Poach salmon until it flakes when pressed with a fork (5 to 8 minutes). Remove from poaching liquid and serve immediately, sprinkled with parsley.
NOTES : A simple but elegant main dish, and one very low in fat, fillet of salmon is also rich in omega-3 oils, which many medical professionals believe help lower cholesterol. For a variation on this recipe, try marinating the salmon in the lemon and wine poaching liquid for several hours and grilling it over hot mesquite charcoal.
