Healthy Homestyle Country Sausage Recipe - Cooking Index
This breakfast sausage is almost fat-free and tastes so much like its fatty counterpart that the taste testers kept asking how it was done.

1/2 cup | 80g / 2.8oz | Cooked brown rice |
2 tablespoons | 30ml | Shredded onions |
2 | Garlic cloves - minced | |
1 1/2 teaspoons | 7.5ml | Ground sage |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Ground red pepper |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Dried thyme |
1/4 teaspoon | 1.3ml | Ground allspice |
Snipped fresh parsley - (optional) |
* Note: To make sure you're buying the leanest ground turkey available, check the label. Look for products made with only turkey breast meat. Many ground turkey products contain the dark meat and the fatty skin.
In a large bowl, stir together the turkey, apples, rice, onions and garlic. In a small bowl, stir together the sage, salt, red and black peppers, thyme and allspice. Sprinkle the spice mixture over the turkey mixture. Using your hands, mix until well blended.
Shape the turkey mixture into eight 1/2-inch thick patties. Spray an unheated large skillet with no-stick spray. Add the patties and cook over medium heat for 4 minutes. Turn the patties over and cook about 4 minutes more or until they are no longer pink. Sprinkle with the parsley, if desired.
This recipe yields 8 patties; 4 servings.
