Crabmeat Au Gratin - 1

Recipe Ingredients

1   Celery - chopped fine
1 cup 62g / 2.2ozOnion - chopped fine
2 cups 474mlMilk
1 teaspoon 5mlSalt
1/4 teaspoon 1.3mlBlack pepper
1 lb 454g / 16ozWhite or lump crabmeat
1/2   Butter
1/2   Bell pepper - chopped fine (small)
1/4 cup 15g / 0.5ozAll-purpose flour
2   Egg yolks - beaten
1/2 teaspoon 2.5mlRed pepper
1/4 cup 36g / 1.3ozCheddar cheese - grated

Recipe Instructions

Saute vegetables in butter until well done, but not brown. Blend flour well into mixture.

Pour in milk gradually and stirring constantly. Add egg yolk, salt, red and black peppers and cook for 5 minutes.

Add crabmeat to sauce, blend well and transfer into a lightly greased casserole dish.

Sprinkle top with cheese and bake in 375F oven for 15 or 20 minutes or until light brown.
