Cod Chowder - 2

Recipe Ingredients

2 tablespoons 30mlButter
1   Onion - chopped
4 cups 584g / 20ozRusset potatoes - diced
5 cups 1185mlMilk
2 lbs 908g / 32ozAtlantic cod - hake, or
  Filet - cut into 6 inch cubes
  Salt
  White pepper
  Chives - chopped for garnish

Recipe Instructions

In a large saucepan, melt the butter and saute onion 2 minutes.

Add potatoes and cook 3 minutes longer, stirring frequently. Pour in milk, bring to boil, lower heat and simmer 20 minutes.

Add fish and cook 10 minutes longer, or until potatoes art tender. Season with salt and pepper.

Sprinkle with chives before serving. Makes 6 to 8 servings.
