Broiled Swordfish Steaks Recipe - Cooking Index
Seasoning mix | ||
1 tablespoon | 15ml | Cayenne pepper |
1 tablespoon | 15ml | Salt |
1 1/2 teaspoons | 7.5ml | Garlic powder |
1 1/2 teaspoons | 7.5ml | Onion powder |
1 1/4 teaspoons | 6.3ml | Fennel seed - ground |
1 teaspoon | 5ml | Anise seed - ground |
1 teaspoon | 5ml | Ground cinnamon |
1 teaspoon | 5ml | Ground cloves |
1 teaspoon | 5ml | Ground ginger |
3/4 teaspoon | 3.8ml | Black pepper |
1/2 teaspoon | 2.5ml | White pepper |

4 tablespoons | 60ml | Unsalted butter - melted |
Combine the seasoning mix ingredients in a small bowl. Place the broiler rack in the middle position and preheat the broiler.
Dip each steak in melted butter, coating both sides. Sprinkle one side of each steak with 3/4 teaspoon of the seasoning mix and place seasoned side down on a broiler-proof pan.
Season the other side of each steak with 3/4 teaspoon seasoning mix.
Broil until the tops are browned but not burned, about 4 minutes.
Serve immediately.
