Botvinia (Cold, Green Vegetable Soup With Fish)

Recipe Ingredients

1   Cucumber large - peeled, halved, seeded, and diced
1 1/2 lbs 681g / 24ozSpinach leaves fresh - washed
6 tablespoons 90mlFrsh lemon juice
1 1/2 lbs 681g / 24ozSorrel leaves - fresh
3 tablespoons 45mlHorseradish root - fresh
1 teaspoon 5mlSalt
3/4 teaspoon 3.8mlSugar
1/2 lb 227g / 8ozCrab meat
1 1/2 lbs 681g / 24ozPoached sturgeon - in 1" pcs. OR
1 1/2 lbs 681g / 24ozPoached whitefish in 1" pcs.
1 cup 237mlScallions sliced
1/4 cup 15g / 0.5ozOnion chopped
1   Garlic clove minced
2 oz 56gVodka
1 1/2   Beer - or -
1 1/2   Kvas (see attached recipe)

Recipe Instructions

Boil 3 quarts of water in a large pan. When boiling briskly add the spinach and the sorrel. Cook uncovered at a brisk boil for 6-8 minutes.

Drain water off, wash vegetables in cold water, then puree in blender. cool to room temperature. Combine the other ingredients in bowl, except for the beer and vodka.

When mixed well slowly add the beer and the vodka stirring constantly. Chill for a minimum of 2 hours before serving.
