Chinese Fried Rice Recipe - Cooking Index
3 tablespoons | 45ml | Cooking oil |

4 | Green onions with tops - chopped | |
1/2 teaspoon | 2.5ml | Salt |
2 | Finely-chopped carrots | |
1/2 cup | 73g / 2.6oz | Finely-chopped bell pepper |
1/2 cup | 118ml | Frozen peas |
1 | Egg | |
1 tablespoon | 15ml | Soy sauce |
1 tablespoon | 15ml | Sesame oil - (optional) |
1/4 cup | 36g / 1.3oz | Chopped parsley |
* Note: Boil rice one day ahead and refrigerate until making fried rice.
Heat the oil in a heavy skillet. Add the boiled rice and stir until golden. Add green onions, salt, carrots, bell pepper and frozen peas.
When mixed well and cooked, hollow out a circle in the center of the skillet. Break the egg into the hollow and scramble until cooked -- then stir the egg into the rice mixture. Sprinkle with soy sauce, sesame oil and chopped parsley.
This recipe yields 6 servings.
