Chinese Fried Rice

Recipe Ingredients

3 tablespoons 45mlCooking oil
2 cups 474mlBoiled rice - see * Note
4   Green onions with tops - chopped
1/2 teaspoon 2.5mlSalt
2   Finely-chopped carrots
1/2 cup 73g / 2.6ozFinely-chopped bell pepper
1/2 cup 118mlFrozen peas
1   Egg
1 tablespoon 15mlSoy sauce
1 tablespoon 15mlSesame oil - (optional)
1/4 cup 36g / 1.3ozChopped parsley

Recipe Instructions

* Note: Boil rice one day ahead and refrigerate until making fried rice.

Heat the oil in a heavy skillet. Add the boiled rice and stir until golden. Add green onions, salt, carrots, bell pepper and frozen peas.

When mixed well and cooked, hollow out a circle in the center of the skillet. Break the egg into the hollow and scramble until cooked -- then stir the egg into the rice mixture. Sprinkle with soy sauce, sesame oil and chopped parsley.

This recipe yields 6 servings.
